Spicy Country Benedict

An open face breakfast sandwich with Chef-Mate® Country Sausage Gravy.

Ingredients:

Biscuits, plan or buttermilk, baked 48 each cut in half
Chorizo Sausage, raw 48 each cooked
CHEF-MATE Country Sausage Gravy 1 No. 10 Can
Cheddar Cheese 3 cups shredded
Scallions 2 cups thin sliced
Red Bell Peppers 2 cups small, diced

Procedure:

  • SINGLE SERVING: Place bottom half of biscuit on a plate. Top with 1 chorizo sausage patty, 2 oz scrambled eggs, 2 oz Country Sausage Gravy and 1/4 oz cheddar cheese.
  • MULTIPLE SERVING: Place bottoms of biscuits in a full hotel pan. Top each biscuit with the following: 1 chorizo sausage patty, 2 oz. scrambled eggs, 2 oz. Country Sausage Gravy and 1/4 oz cheddar cheese.
  • Top with other half of biscuits.

OPTIONAL GARNISH:

  • Green onions and red peppers
